So summer has gone and with it many of my favourite
ingredients! I have always been a lover of seasonal
ingredients and firmly believe that the only role
a cook should play in creating a great dish is
to use the best locally sourced, where possible
organic, ingredients and to allow the natural flavours
of those ingredients to speak for themselves. But
fear not because we now enter the ‘hearty’ season
for food when robust autumnal flavours dominate.
Talking of ingredients, what a nightmare, my wife
has recently been diagnosed as having a total intolerance
to gluten (Celiac Disease). I can’t begin
to tell you how much of a problem this can be for
someone who adores cooking and in particular loves
to cook. I am now busy experimenting with various
ingredients and am going to dedicate a full chapter
to this subject in my new book.
However my biggest
project at the moment is the development of our
own boutique hotel! We have just acquired a fabulous
townhouse on the Isle of Man called Birchfield
House and we aim to open mid February 2008. Imagine
stunning antique furniture, including the most
romantic four poster beds, luxurious bathrooms
and a beautiful intimate dining room set in the
original library and you have the essence of what
we want to create. This coupled with some of my
fantastic dishes using superb local organic ingredients,
make it my most exciting venture yet! Enquiries
